Hey friends! I’m so excited to share one of my absolute favorite side dishes — Maple Glazed Carrots with Goat Cheese. It’s simple, but it feels fancy enough for any holiday table or dinner party. Plus, it’s packed with all those cozy, comforting flavors I love: sweet maple, creamy goat cheese, crunchy nuts, and just the right touch of thyme and hot honey to keep things interesting.

I always serve mine on our beautiful Wavy Platter (it’s $88 and trust me, it makes everything look extra special). You can message me or stop by the store if you want one — they’re perfect for entertaining or even just making everyday meals feel a little more joyful.


Here’s what you need:

  • 3 packs of colorful baby carrots (with stems — they roast so well!)

  • Olive oil

  • Maple syrup

  • Salt & pepper

  • Candied pecans or walnuts

  • Dried cranberries

  • Crumbled goat cheese

  • Hot honey (my secret weapon)

  • Fresh thyme


How I make it:

  1. First, preheat your oven to 400°F.

  2. Toss those beautiful baby carrots with olive oil, maple syrup, salt, and pepper.

  3. Roast them for about 20–25 minutes, then give them a toss and roast a little longer until they’re perfectly browned and tender.

  4. Lay the carrots out on your favorite platter (hello, Wavy Platter!).

  5. Sprinkle with goat cheese, nuts, and dried cranberries.

  6. Drizzle a little hot honey over everything — it adds the perfect kick.

  7. Finish with fresh thyme leaves and you’re done!


Why I love this recipe:

It’s easy to throw together, but it looks and tastes like you spent hours in the kitchen. The mix of flavors is just chef’s kiss. Every time I bring this to a gathering, it disappears fast — so fair warning, you might want to make extra!
